ALBACORE (Thunnus alalunga)
As all the other types of fin fish, we purchase these in the H&G form, Albacore are usually 30 lbs. and up on average.
LAKE WHITEFISH (Coregonus clupeaformis)
This fish is always purchased head-on (dressed)!
There are 3 size ranges, Jumbo, Large, and Mediums. Large are used primarily for fillets, Mediums are sold mostly to the ethnic market. Jumbo's would be considered the hardest to get and usually command a higher price.
MAHI (Coryphaena hippurus)
We purchase only 10 lb and up, H&G fish and larger. 5-10 lb. H&G are available and usually at a reduced price. We also purchase Mahi in the fillet form and portions.
ROBALO, WAHOO, ESCOLAR, PARGO, etc.

Some of the "exotics" are seasonal and some are a bi-catch. We can and do sell any type of exotic fish you may have or in need of!
SEA BASS (including Corvina's and Grouper's; Latin names avalable upon request.)
Generally, most Bass are in the H&G form and are at least 15 lbs. and larger. During the coarse of the year there are always at least 2 or 3 different types of Bass available and separate markets for each.
SWORDFISH (Xiphias gladius)
All sizes are available in the H&G form. Our general size range is between 175 lbs. and 300 lbs. Both larger and smaller sizes are available; loins are available upon request.
TUNA (Thunnus albacores and obesus)
We purchase both Bigeye and Yellowfin.
Size gradings are as follows: 40/60 lb., 60/99 lb., and 100 lbs. and up. We can carry the "#1 sushi" grade to the "#2+ grill grade. More detailed information is available upon request.
WALLEYE (YELLOW) PIKE (Stizostedion vitreum)
Pike are sold in the round (whole); they are a specialty on the west coast that appeal to chefs who are familiar with freshwater fish.
